Roasted Tomato Soup





Ingredients: 

4 tomatoes
1 red or yellow onion
2 red bell peppers
3 garlic cloves
2 tbsp olive oil
2 tbsp balsamic vinegar
2 sprigs of fresh thyme
1 sprig of fresh rosemary
1 tsp smoked paprika
1/4 tsp salt - optional
1⁄4 tsp black pepper, plus more to taste
1 cup low sodium vegetable stock
 
 
Slice your veggies, place in a roasting pan. Sprinkle with your herbs, drizzle with olive oil and balsamic vinegar then roast at 350 for 35 - 40 minutes.

Let cool a few minutes then pour everything into a blender. Add your vegetable stock and blend until creamy. Pour into a pan and simmer for 10 minutes then enjoy!💗
