Yellow Squash Soup

 

Ingredients: 

1 medium or, 3 small, yellow squash - chopped
2-3 cloves of garlic - chopped
2 stocks of celery - chopped
1 carrot - chopped
1- green onion - chopped
2-3 teaspoons nutritional yeast
1 Tablespoon olive oil
1 cup plant based milk
 
Add olive oil to a pan, heat on medium; add first five ingredients and sauté until all the veggies are fork tender. Remove from heat and allow to cool to room temperature.

When cool place your vegetables in a blender, add 1 cup of plant based milk and the nutritional yeast, blend until smooth and creamy. Taste delicious both chilled or warmed up. Enjoy.😉
