Iced Hibiscus Coconut Tea

 


2 cups of roselle hibiscus tea

3 fresh strawberries 

3 slices fresh or frozen peaches 

3 small chunks of fresh or frozen mango 

2 teaspoons honey or maple syrup 

1 teaspoon vanilla

2 cups chilled, unsweetened coconut milk 

Ice 


Add first 6 ingredients to a small pan. Bring to a boil; cover, remove from heat and allow to steep until room temperature. Strain fruits. Refrigerate until chilled.

Add tea and coconut milk to a blender. Blend on low just until mixed thoroughly. 

Add ice to glasses, pour in coconut milk tea.

If you're wanting caffeinated tea, you can add your favorite caffeinated tea, loose leaf or tea bag, to the first 6 ingredients.
