Pasta Salad




 

Gluten-free Pasta Salad

Ingredients:

1 cup gluten free chickpea rotini
1 cup gluten free red lentil rotini
2 boiled eggs, chopped 
1 ripe avocado, diced 
1/4 cup diced onion
1/2 cup raw, chopped, broccoli florets 
1/2 cup diced tomato

Directions:

Cook pasta according to package directions. Drain and run under cold water until chilled. 

Pour pasta into a medium size bowl, add the remainder of ingredients, mix gently until well combined. 

Next, prepare your dressing. You may not need to use the entire recipe of this dressing that's just up to your preference. Slowly drizzle the dressing over the pasta, mixing gently until well incorporated. 

This salad is delicious to eat right away. However, refrigerating for several hours or overnight, allows all the flavor combos to blend together very beautifully.

Dressing:

1/4 cup fresh lemon juice
1/4  cup fresh lime juice
1 clove garlic
1/2-inch knob of ginger, peeled
2 tablespoons raw honey
1 tablespoons stone ground mustard
1/8 teaspoon black pepper 

Directions: 

Add above dressing ingredients add above dressing ingredients to a small blender or small food processor and combine until smooth and creamy. Keep any leftover dressing refrigerated.
