Samoas Cookies

 


Ingredients:


1 cup dates

1 cup toasted unsweetened coconut 

1/2 teaspoon coconut oil 

1/3 cup bakers dark chocolate


Add dates and toasted coconut in a food processor. Mix until ingredients are finely chopped and well combined. 

Using a tablespoon, scoop out a level spoonful - roll mixture with hands until it forms a ball. Flatten between palms, place on a small cookie sheet. Use a straw to poke a hole in the center. Continue with the rest of the mixture. Place in freezer for 15-20 minutes. 

Melt chocolate and coconut oil in a small pan. Gently place the backside of the cookie into the chocolate, then place chocolate side up on cookie sheet. Continue with the rest of the cookies, return to freezer until chocolate is set. 

Remover from freezer, turn right side up, drizzle the top of cookies with the remaining melted chocolate. Return to freezer until chocolate is set. Remove from freezer and enjoy. Yum. 

* I used 100% cacao baking bars. The chocolate was quite bitter. If you prefer something a little sweeter try using a chocolate bar that has a lower percentage of cacao. 😋
