Ingredients:
11/2 cup of old fashioned oats
1 teaspoon flax seed powder
1/2 cup nut butter - I used homemade unsalted peanut butter
1/8 cup raw honey or maple syrup
3-4 tablespoons raisins
1 Tablespoon mix of ground sunflower seeds, cashews, and pumpkin seeds - optional
1 teaspoon cinnamon
1/8 teaspoon powdered pomegranate peel - optional.
1/8 teaspoon powdered orange rind - optional. I used this for added flavor.
Directions:
Add ingredients to a bowl, stir until combined. Mixture should form into a thick batter like consistency.
Transfer onto a baking sheet lined with parchment paper. Press batter down firmly until evenly dispersed. Refrigerate until firm. Enjoy!
* For the ground seed mix, I placed 2 tablespoons of each - unsalted sunflower seeds, unsalted pumpkin seeds and unsalted cashews in my NutriBullet, then ground is that mixture into a course powder.
* You can also use a high powered blender for the seed mixture as well as the pomegranate and orange peel powder.
* For the powdered pomegranate peel and orange rind peel; I saved the from a fresh pomegranate and the peel from a fresh orange.
Once cut into manageable size pieces, I scraped the inside of both the peels, then lay them on a plate to completely dry.
Once dried, I use my NutriBullet to grind each individually into a powder.
* I used the pomegranate peel powder as an added health benefit of antioxidants, and anti-inflammatory benefits. As well as adding a sweet/tart flavor.
